Old Fashioned Gingerbread Cake Blueberry Cookie Butter Filling




This old fáshioned gingerbreád cáke is the ultimáte gingerbreád lover's cáke. Láyers of spicy gingerbreád filled with cookie butter whipped creám, lime zest ánd fresh berries, then topped with more fresh blueberries ánd gingerbreád cookies máke this every gingerbreád fán's dreám cáke!

Ingredients

Old Fáshioned Gingerbreád Láyer Cáke:
  • 2/3 cup vegetáble oil
  • 1/2 cup white gránuláted sugár
  • 1/2 cup pácked dárk brown sugár
  • 3 lárge eggs
  • 3 tbsp finely-gráted fresh ginger
  • 2 tsp finely-gráted lime zest
  • 2 cups áll- purpose flour, sifted
  • 2 tsp báking powder
  • 3/4 tsp ground cinnámon
  • 1/4 tsp ground állspice
  • 1/4 tsp ground nutmeg
  • 1/2 cup molásses
  • 1/2 cup máple syrup low sugár váriety
  • 1 cup ginger beer
  • 2 tbsp lime juice
  • 1 tsp báking sodá
Blueberry Cookie Butter Filling:
  • 2 tsp lime zest, finely gráted
  • 6 tbsp cookie butter * Cán substitute Biscoff spreád
  • 4 cups whipping creám
  • 4 tbsp piping gel
  • 2 pints fresh blueberries
Gárnish:
  • ginger snáp cookies

Instructions
  1. Preheát the oven to 350F. Greáse 3 -8-inch round cáke páns. * I use cáke releáse, ás your cákes do not stick with this product.
